Today’s dish is one of my favorite salads. It’s super easy and fast to make, healthy, and delicious! Since the dressing provides a lot of the flavor in this dish, it’s important to use good quality oil and vinegar. Sprinkle the salad with toasted pine nuts and serve with ciabatta, baguette, or whatever suits your fancy. Enjoy!
- Hearts of Romaine
- Zucchini, cut into match sticks
- Feta, sliced
- Onions, sliced and caramelized in a pan
- Olive oil, balsamic vinegar, salt, pepper – mixed until well incorporated
- Toasted pine nuts

Welcome to Thorny Tomato! I love to eat, and I love to cook, so I have decided to mix it all up and dish it out as a delicious little blog. Speaking of delicious, how come we don’t all like the same food? Some of us clearly prefer their cake, while others would rather dine on something more…shall we say, earthy. What is it with people loving to suck on raw oysters, nibble on mold encrusted cheeses, and get their hands dirty on greasy chicken wings? Sound all finger licking good to you?
