
A flash in the pan! Zucchini, tomatoes, yellow bell peppers, scallions, and garlic. Sauteed with olive oil, thyme, rosemary, salt and pepper…and a dash of aged balsamic vinegar for good measure. Nicely accompanied by crispy oven fries. Add a nice piece of grilled meat if you feel carnivorous. Bon appetit!
Today’s dish is one of my favorite salads. It’s super easy and fast to make, healthy, and delicious! Since the dressing provides a lot of the flavor in this dish, it’s important to use good quality oil and vinegar. Sprinkle the salad with toasted pine nuts and serve with ciabatta, baguette, or whatever suits your fancy. Enjoy!
- Hearts of Romaine
- Zucchini, cut into match sticks
- Feta, sliced
- Onions, sliced and caramelized in a pan
- Olive oil, balsamic vinegar, salt, pepper – mixed until well incorporated
- Toasted pine nuts
