Hearts of Romaine With Zucchini, Feta, And Caramelized Onions
Today’s dish is one of my favorite salads. It’s super easy and fast to make, healthy, and delicious! Since the dressing provides a lot of the flavor in this dish, it’s important to use good quality oil and vinegar. Sprinkle the salad with toasted pine nuts and serve with ciabatta, baguette, or whatever suits your fancy. Enjoy!
- Hearts of Romaine
- Zucchini, cut into match sticks
- Feta, sliced
- Onions, sliced and caramelized in a pan
- Olive oil, balsamic vinegar, salt, pepper – mixed until well incorporated
- Toasted pine nuts

That looks like a simple but delicious salad! I’ll have to try it soon.
That looks delish!!!
Thanks, Douglas. Get in the car and come on over for dinner!
So, do you leave it separated like that, or is it mixed together? Sounds great and looks beautiful! Thanks for sharing.
Thanks, Kaitlin! No mixing involved, you leave it all separate, so you get a bit of this and a bit of that with every bite.
