Today’s dish is one of my favorite salads. It’s super easy and fast to make, healthy, and delicious! Since the dressing provides a lot of the flavor in this dish, it’s important to use good quality oil and vinegar. Sprinkle the salad with toasted pine nuts and serve with ciabatta, baguette, or whatever suits your fancy. Enjoy!

  • Hearts of Romaine
  • Zucchini, cut into match sticks
  • Feta, sliced
  • Onions, sliced and caramelized in a pan
  • Olive oil, balsamic vinegar, salt, pepper – mixed until well incorporated
  • Toasted pine nuts
